Several years ago I concocted these Turkey Meatballs with random ingredients I had in my fridge. Dinner was so yummy I decided to share the recipe on my personal Instagram page. These meatballs warrant another share for anyone who missed them the first time around.
Makes 4 Servings
Ingredients –
1 lb ground turkey
1 medium shallot, minced
2 cloves garlic, minced
1 egg
1/4 cup organic bread crumbs
1 Tbsp fresh oregano, finely chopped
1 Tbsp fresh parsley, finely chopped
1 Tbsp fresh basil, finely chopped
1 tsp kosher salt
1/2 tsp freshly ground black pepper
1 Tbsp extra virgin olive oil
1 jar organic marinara sauce
Step 1: Preheat Oven to 425
Step 2: Place the first 10 ingredients, turkey through black pepper, in a bowl and mix together with your hands until just combined.
Step 3: Form into 8 meatballs, taking care not to pack the meatballs tightly.
Step 4: Heat extra virgin olive oil over medium high heat in an oven proof nonstick skillet.
Step 5: Lightly brown the meatballs in the skillet on all sides (about 5 minutes).
Step 6: Remove from heat and add the marinara sauce to the skillet. Turn meatballs to coat with marinara sauce.
Step 7: Place the skillet in the oven and continue cooking for 12-15 minutes or until cooked through.
Step 8: Serve 2 meatballs on their own, over whole wheat pasta or make yourself a meatball sub!
